QUICK MONGOLIAN BEEF

Mongolian Beef




INGREDIENTS

  • 2 pounds beef tenderloin, cut into strips
  • ½ cup cornstarch
  • oil, for frying

For the Sauce:

  • 2 tbsp cooking oil
  • 1 tbsp finely chopped ginger
  • 1 tbsp finely chopped garlic
  • ½ cup soy sauce
  • ½ cup rice vinegar
  • ½ cup water
  • ½ cup brown sugar
  • 3 tsp cornstarch, diluted in 4 1/2 tsp water
  • 1 tsp red chili flakes (optional)
  • ½ cup scallions, chopped into 1 inch pieces

INSTRUCTIONS

  1. Coat beef strips evenly in cornstarch
  2. Deep fry the beef strips for 4-5 mins
  3. Put the beef strips on a paper-towel lined plate to soak up some oil, set aside
  4. In a saucepan, heat oil on high heat setting. Add in the ginger and garlic, stir for 10 seconds. Immediately add in the soy sauce, water, and rice vinegar. Bring the sauce to a quick boil.
  5. Mix in the brown sugar and cornstarch
  6. Now add in the beef strips and let cook for 2 minutes
  7. Add the scallions and cook for additional minute
  8. Serve hot over rice
